Bobble the Heads

Pick a throwing offense for them, hike the ball for them and then just take as much time as you want controling your team to get the sack and negative yards. If you're playing with the help of a friend, then he can make sure the defense doesn't do it's job so you can get high scores and lots of yards, running and passing.
